Ingredients (Serves 2)

  • 1 cup cooked quinoa (protein and fiber)
  • 1 cup chickpeas, rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook quinoa per package (or use pre-cooked).
